This creamy chicken and corn soup is the perfect comfort food to mend a broken heart. So, put on your softest, comfiest robe, don your best bling and head into the kitchen to whip up this dish like a diva on the mend.

Unicorn Tears Co-Op Hot Sauce
Recipe to Mend a Broken Heart-
Chicken Corn Chowder Soup with Unicorn Tears
Ingredients:
☐ 1 tablespoon butter
☐ 3/4 cup chopped onions
☐ 1 cup green bell pepper (capsicum) chopped
☐ 2 cups diced potatoes
☐ 2 tablespoons Unicorn Tears
☐ 1 1/2 cups of cooked corn (canned or frozen, defrosted and drained)
☐ 1 bay leaf
Step by Step Instructions:
Step 1: Make Roux
- In a Dutch oven, heat oil and butter on medium heat. Add chopped onions and sauté until the onions soften.
- Add 1/2 cup of chopped bell peppers and sauté lightly.
- Add the flour and fry for 3-4 minutes, stirring constantly with a wooden spoon.
- Reduce heat to low. Slowly incorporate the milk, a little a time, whisking constantly with a whisk to create a smooth roux without any lumps.
Step 2: Add Broth and Potatoes
- Increase heat to medium and pour in the chicken broth. Add a bay leaf, salt and pepper to taste. Bring to a simmer.
- Add the potatoes, cover and simmer until the potatoes are cooked.
Step 3: Add Hot Sauce, Chicken and Corn
- Add the Co-op Unicorn Tears hot sauce.
- Add the corn, shredded chicken and remaining 1/2 cup of green bell peppers and remove from heat.
