Peanut Butter Banana Waffles | A Mighty Mini Breakfast
You know a three year old is growing up when he turns his nose up at his morning bowl of Weetabix mush and declares that he wants a better breakfast.
So, to satisfy my nephew's budding discerning taste buds, I made these healthy and delicious mini banana waffles with mashed banana and whole wheat flour for the waffle batter.
Topped with a smear of unsweetened peanut butter, sliced fruit and a drizzle of honey, these waffles are filling and nutritious, packed with protein, fiber and good fats; a truly mighty mini breakfast.
You know it's messy business giving a three year old finger food that involves honey and peanut butter. But, it was so worthwhile watching him put away every last bit of waffle and fruit in the blink of an eye. Then, look up at me with sticky fingers and declare between loud lip smacks, "More!"

DASH Mini Waffle Maker
To make these 4 inch mini waffles, I used the little DASH Mini Waffle Maker. The dual non-stick heating surfaces ensure even heating that turns out puffy, golden brown waffles that cook quickly and can be lifted off easily.
How long do mini waffles take to cook in a Mini Waffle Maker?
Pour the waffle batter into a hot waffle maker, greased with butter. (The DASH Mini Waffle maker is heated and ready for use, when the indicator light goes off.)
These banana waffles become puffy and turn golden brown in 90 seconds. Start checking the waffle after about a minute. They should be ready in 90 seconds once the steam stops coming out of the lid. For browner, crispier waffles, cook for 2 minutes.
How much batter to put in a Mini Waffle Maker?
To make 4 inch mini waffles, pour 1/4 cup of batter into a heated Mini Waffle Maker. This is the equivalent of 3 tablespoons of batter; just enough to get perfect waffles with no overflow.

Step 1: Make Waffle Batter
- In a bowl, combine the flour, baking powder, baking soda and salt.
- In a separate bowl, add the egg and beat well with a fork. Add the mashed banana, sugar, milk and oil and whisk together to combine.
- Add the dry ingredients and mix until a smooth batter forms with no clumps.
Step 2: Make Waffles
- Heat the Mini Waffle iron. When the waffle iron is hot, use a bristle brush to coat both surfaces with a little butter.
- Drop about 1/4 cup of batter (approx. 3 tablespoons) into the center of the Mini Waffle Maker. Close and cook for 1 1/2 minutes until the waffle is golden brown.
Step 3: Serve
- Serve with a teaspoon of peanut butter.
- Top with sliced strawberries and bananas and drizzle with maple syrup or honey.
- Dusting of powdered sugar (optional)
